Guérande salt is one of the highest quality salts in the world. With an unmistakable grayish color, this salt comes from Guérande, the peninsula from which it gets its name and which is located on the Atlantic coast of the historical region of Brittany (France).
It is a natural sea salt rich in mineral salts and trace elements, unrefined, without additives and dried in the sun. It is collected manually by the Paludiers who generation after generation harvest by hand in the same way as it was done in the s. XIX.
Lady Joseph, discovered the properties of this sea salt during her summers in Brittany and was always an essential ingredient in the elaboration of her recipes.
The flour is ground by hand. Stone-ground flours are more nutritious and aromatic than those ground with industrial steel rollers.
We let our doughs rest for 12 hours and cook slowly to maintain the nutrients and obtain an extra thin and crunchy cracker, but consistent at the same time.
