The calisson would go back to the middle of the 15th century, when during René d'Anjou's second marriage to Jeanne de Laval in 1454, the patron of the King's confectionery would have served, thus giving a smile to the future queen, reputed to be ungraceful.
Named Calisone in Italy and Kalitsounia in Greece, calisson appeared in Aix in its modern form around 1473.

Store in a temperate place away from moisture and heat, between 18°C and 22°C.
